Captain Dave has been working with crabs for nearly twenty years, which might explain why he's so "crabby." Crabs shed their shells 24 hours a day and must be removed from the water about an hour after shedding, or they'll harden back into their usual state. During the shedding process, when they split open their shell, they become extremely vulnerable and need to be separated from their more aggressive, "greener" tank mates.
Once they molt, they become the best table fare money can buy. Their normally hard exterior turns into a soft, tender bite, perfect for cooking whole or making cleaning easier.
